Ingredients :

  • • 1 cup old fashioned rolled oats (use certified gluten-free oats, if needed)
  • • ½ cup oat flour*
  • • ½ cup dried cranberries, raisins, or other dried fruit**
  • • ½ cup unsalted pumpkin seeds (pepitas) or other seed/nut**
  • • ¼ cup ground flaxseed
  • • 1 tablespoon chia seeds
  • • 1 teaspoon cinnamon
  • • ½ teaspoon baking powder
  • • ¼ teaspoon salt
  • • 1 large mashed banana or ½ cup unsweetened applesauce
  • • 3 tablespoons melted coconut oil or butter
  • • 3 tablespoons coconut nectar/syrup, honey, or other liquid sweetener
  • • 2 tablespoons almond milk or other milk of choice

Instructions :

  • 1. Preheat oven to 325ºF. Combine dry ingredients in a large mixing bowl—oats, oat flour, dried cranberries, pumpkin seeds, ground flaxseed, chia seeds, cinnamon, baking powder, and salt.
  • 2. Stir in mashed banana, coconut oil, coconut nectar, and almond milk until well blended. Let mixture rest for 4–5 mintutes, giving time for chia and flax to bind everything together. Should look like the dough in the photo above. If your dough has gotten too thick, stir in an additional 1–2 tablespoons milk before scooping out onto your baking sheet.
  • 3. Measure dough out by the scant ¼ cupful and place on a baking sheet lined with parchment paper (or lightly greased). These cookies don’t spread much while baking, so I like to gently press the dough with the palm of my hand to flatten a bit.
  • 4. Bake for 15–18 minutes, or until cookies are lightly golden around the edges.
  • 5. Store leftovers in an airtight container for 2–3 days. Makes 8–9 cookies.

Ingredients

  • Sauce
  • 1/4 cup peanut butter
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons water
  • 1 teaspoon sesame oil
  • 1 tablespoon lime juice
  • Filling
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon Thai red curry paste
  • 1 lb lean ground turkey
  • 1 cup carrots shredded
  • To serve
  • 7 oz Better Romaine Leaf
  • green onions to garnish
  • peanuts to garnish

Instructions

  1. Shake together all peanut sauce ingredients and set aside.
  2. Heat oil in a large pan and add the onions, garlic and Thai red curry paste. Stir until red curry paste is heated through and mixed in evenly with the onions (2-3 minutes).
  3. Add the ground turkey and cook, breaking it up with a spatula, for 5-7 minutes, until no pink remains and the turkey is cooked through.

  • 8 ounces artichoke hearts drained and chopped
  • 6 ounces baby spinach leaves
  • 4 ounces cream cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese
  • 8 TortillaLand flour tortillas found at Costco

Instructions

  1. Using a large skillet, cook 8 tortillas as directed on package (just heat on each side for 60 seconds).
  2. Heat the oil in a large pot over medium-high heat. Add in the artichoke pieces and cook for one minute. Reduce heat to medium, add in the spinach, and cook until wilted, turning often. Mix in the cream cheese and mozzarella and Parmesan cheeses, and let it melt entirely while stirring. Season with salt and pepper to taste. Remove from heat.
  3. Assemble your quesadillas: Spread about 1/4 cup of the mixture on 4 of the tortillas, then top with remaining tortillas.

Ingredients :

  • 1 cup sour cream
  • 2 teaspoons garlic powder
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon fresh ground black pepper
  • 1 1/2 cups freshly grated Parmesan cheese, divided
  • 3 pounds boneless chicken breasts, trimmed of excess fat

Instructions :

  • Preheat oven to 375°F. Lightly coat a 9×13 baking dish with nonstick spray and set aside.
  • In a medium bowl, mix together the sour cream, garlic powder, seasoned salt, pepper, and 1 cup of Parmesan cheese.
  • Place the chicken breasts evenly into the pan. Spread the sour cream mixture on top of the chicken. Sprinkle with the remaining Parmesan cheese.
  • Bake for 25-30 minutes, or until the chicken is cooked through.
  • Turn the oven to broil and place the pan under the broiler for 2-3 minutes until lightly browned on top.
  • Serve immediately.

  • 8 ounces cream cheese room temperature
  • 1 red bell pepper finely diced
  • 1 jalapeno seeded, finely diced (double it up or leave in seeds if you want more spice)
  • 1 small can black olives finely diced
  • 15 ounces canned corn drained
  • 1 packet ranch seasoning

INSTRUCTIONS

  • Dump everything into a bowl and start stirring it together. As the vegetables start to release a little of their water, the mixture will come together much easier. Continue stirring until well combined.
  • Serve immediately or store in the fridge, covered, for up to 24 hours. The longer the dip sets, the more water the vegetables will release. We prefer this eaten sooner than later.
  • Serve with crackers or chips.
