Ingredients :

  • 2 cup Packaged Shredded Cheddar Cheese
  • 1 pound Ground Beef
  • 2 tablespoon Chili Powder
  • 2 tablespoon Cumin
  • 1 teaspoon Salt + more to taste
  • 8 teaspoons Sour Cream for garnish
  • Pico de Gallo for garnish

Instructions :

  • Preheat oven to 350F.
  • On a baking sheet lined with parchment paper or a silicone mat place 1 Tablespoon piles of cheese 2 inches apart.
  • Place baking sheet in the oven and bake for 5-7 minutes or until the edges of the cheese are brown.
  • Let the cheese cool for 1 minute then lift it up and press it into the cup of a mini muffin tin pushing it down to form a cup.
  • Let cheese cool completely then remove.
  • While you continue to bake the cheese and create your cups place the ground beef in a skillet over medium high heat cooking until it is completely cooked through.
  • Drain the grease from the meat and then add the spices and 1/4 c of water.
  • Stir until combined and simmer for 5 minutes then add more salt to taste.
  • Add meat to cheese cups and top with 1/4 teaspoon of sour cream each. You can also add fresh pico de gallo if you like.

  • 8 oz Philadelphia Chive Whipped Cream Cheese
  • 10.5 oz condensed cream of chicken soup
  • 1 bunch green onions, chopped
  • 3 cups chicken, cooked, shredded
  • 8.75 oz canned corn
  • 3 cups shredded Mexican cheese blend
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 3 cups Doritos, crumbled

Instructions :

  • 1. Preheat oven to 400F.
  • 2. Dump cream cheese and chicken soup into a large mixing bowl.
  • 3. Whip together with an electric mixer until smooth.
  • 4. Set aside 1/4 cup of the chopped green onions and add the remaining onions to the mixing bowl.
  • 5. Also add the shredded chicken, drained canned corn, 2 cups of the shredded Mexican cheese blend, salt, pepper and garlic powder to the bowl.
  • 6. Stir all of the ingredients together until fully combined.
  • 7. Dump the mixture into a greased 9 x 13 inch baking dish and spread it out evenly.
  • 8. Sprinkle the crumbled Doritos on top.
  • 9. Sprinkle the remaining cup of shredded Mexican cheese blend and 1/4 cup of chopped green onions on top of the Doritos.
  • 10. Place the dish in the oven and bake until the cheese on top is starting to brown. 17-20 minutes.
  • 11. Serve and enjoy!

INGREDIENTS

  • 250g uncooked penne pasta
  • 1 tbsp + 1/2 tsp extra virgin olive oil
  • 4 to 5 garlic gloves, minced (2 tbsp)
  • 1 1/2 tbsp cornflour*
  • 2 cups unsweetened almond milk
  • 1/2 tsp salt + pepper to taste
  • 1/2 + 1/4 cup sun dried tomatoes (jarred in oil, with garlic and herbs included), drained from any oil
  • 1 tbsp nutritional yeast
  • 1 onion, diced
  • 1 tsp chilli flakes, or to taste
  • 1/2 tsp dried oregano
  • 2 to 3 big handfuls of rocket or baby spinach

INSTRUCTIONS

  1. Cook your pasta according to the package instructions, but leave the pasta just slightly undercooked. Set aside.
  2. Add 1 tbsp olive oil into a large frying pan over medium to high heat. When hot, add garlic and cook for 2 minutes or until lightly browned. Mix in cornflour and cook for a further minute. Add 1/2 tsp of salt and 1 cup of almond milk, making sure that the mixture is smooth besides the garlic. When it has thickened, add the remaining cup of almond milk. When it has thickened slightly (it will thicken further when blended), pour this into a blender.
  3. Add 1/2 cup sun dried tomatoes, nutritional yeast and 1/3 cup water to the blender and blend until smooth. Set aside.

  • 2 teaspoons seasoning salt (I use Lawry’s)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 3 lb beef chuck roast Or another, cut in half
  • 1 tablespoon canola oil
  • 1 cup low sodium beef broth
  • 1 tablespoon tomato paste
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1.5 lb Little Potatoes
  • 3 large carrots peeled and cut into thick slices
  • OPTIONAL: corn starch to thicken juices

Instructions :

  • In a small bowl, combine seasoning salt, garlic, parsley, onion powder and pepper. Sprinkle over roast to season.
  • Turn Instant Pot to saute. When it reads “hot”, add the oil and sear roast on all sides. To do this, place the roast in the pot and do not move for 2-3 minutes. When you flip it, it should release from the pan easily.
  • To the Instant Pot add broth, tomato paste, vinegar and Worcestershire sauce — if there are brown bits stuck to the bottom from the meat, give them a scrape and they should release easily. Stir to combine.
  • Put the lid on and turn the valve to sealing. Select Manual or Pressure Cook and set the cook time for 55-65*** minutes, depending how large your pieces are. (65 minutes to be safe)
  • When the cook time is over, turn the Instant Pot off and let the pressure release naturally for 10 minutes before turning the valve to venting and opening the lid.
  • Add the Little Potatoes and carrots, put the lid back on, turn the valve to sealing and select Manual or Pressure Cook for 3 minutes.
  • When the cook time is over, let pressure release naturally for 10 minutes before moving the valve to venting, releasing remaining pressure and opening the lid.
  • Remove beef from the Instant Pot and slice or pull as desired. Serve with potatoes and carrots.
  • OPTIONAL: If desired, combine equal parts corn starch and water, stir into the remaining juices and turn the Instant Pot to saute. Whisk continuously until juices are thickened and serve with pot roast.

Ingredients :

  • • 8 apples small green apples are great, cored and peeled, sliced thick or cubed
  • • 1 c brown sugar
  • • 1 tsp cinnamon
  • • 1/4 tsp nutmeg optional but good if you like that flavor
  • • 1/2 tsp vanilla extract
  • • 1 c water
  • • 1/2 c old fashioned oats not instant, for topping
  • • 1/4 tsp cinnamon for topping
  • • 3 tbsp butter melted, for topping
  • • 1/4 c flour for topping
  • • 1/2 c brown sugar for topping

Instructions :

  • Remove skins (no more than 1/2 or they’ll get mushy) from apples, and but them into THICK cubes or thick slices if you’d rather.
  • Put sliced/cubed apples into your Instant Pot (very thick slices, and large cubes). Then add your 1 tsp. cinnamon, a pinch of nutmeg if you would like,  vanilla, 1 c. brown sugar, and water into your pot and stir together.
  • Put lid on and close steam valve. Set to manual, pressure, high for 1 minute. 
  • While that’s cooking mix together your old fashioned oats, 1/4 tsp cinnamon, 3 tbsp melted butter, 1/4 c. flour and 1/2 c brown sugar until combined well.
  • Do a quick release, then lift lid.
  • Set your Instant Pot to saute and sprinkle your crumble mixture into your pot, gently push down into liquid allowing it to bubble and thicken with the addition of the flour and other ingredients (about 1 min). 
  • Stir very gently maybe 2 times during the 1-2 minutes it begins to bubble on saute (more will break up apples).
  • After that time turn pot off immediately so apples don’t continue to cook. Ideally transfer to another dish and serve immediately for best pressure cooker baked apples ever.

  • • Chicken Marinade
  • • 1 and 1/2 pounds boneless skinless chicken breasts (can also use thighs)
  • • 3/4 cup + 1 tablespoon freshly squeezed orange juice, separated
  • • 1/2 cup + 1 teaspoon olive oil, separated
  • • 1/3 cup + 2 tablespoons freshly squeezed lime juice, separated
  • • 1 and 1/2 teaspoons lime zest, separated
  • • 1 tablespoon honey
  • • 1 teaspoon + 1/4 teaspoon cumin, separated
  • • 2 and 1/2 tablespoons soy sauce
  • • 2 teaspoons minced garlic
  • • 1/2 cup coarsely chopped cilantro, separated
  • • Mango Avocado Salsa
  • • 1 ripe mango
  • • 1 ripe avocado
  • • 1/4 cup finely diced red onion
  • • 1/4 cup finely chopped red pepper
  • • 1 tablespoon finely chopped jalapeno, optional
  • • Fine sea salt and freshly cracked pepper
  • • Optional: cilantro-lime rice or quinoa (see recipe notes)

Instructions :

  • MARINADE: Whisk together all of the marinade ingredients: 3/4 cup orange juice, 1/2 cup olive oil, 1/3 cup lime juice, 1 teaspoon lime zest, honey, 1 teaspoon cumin, soy sauce, garlic, and 1/4 cup cilantro in a medium-sized bowl. Add salt and pepper to taste (I use about 1 teaspoon salt and 1/4 teaspoon pepper). Remove about 1/2 cup of marinade, and pour the rest into a large resealable bag.
  • Trim the chicken of fat. Pound the breasts to even thickness or slice in half to get evenly sized breasts and place in the bag with the rest of the marinade. Place in the fridge for at least 30 minutes making sure to flip the bag halfway through the time it is in the fridge. I recommend marinating for 2-8 hours.
  • COOK CHICKEN: The instructions below are to grill the chicken. To see other methods of cooking chicken, read right above this recipe card. Lightly oil the grill grate or grill ridges on a grill pan or add 1 tablespoon oil to a skillet and then place the marinated chicken on the grill. Discard leftover marinade.
  • Grill for 10-12 minutes or until chicken juices run clear and internal temperature is at 165 degrees F. Flip the chicken halfway and brush it generously with the reserved 1/2 cup marinade.
  • MANGO SALSA: Take the remaining 1 tablespoon orange juice, remaining 1 teaspoon olive oil, 2 tablespoons lime juice, remaining lime zest, and remaining 1/4 cup cilantro and toss together.
  • (OPTIONAL: When grilling the chicken, also grill the mango. Brush with oil and grill on one side for about 4-5 minutes at medium-high heat.)
  • Chop the mango and avocado into small bite-sized pieces. Add to the salsa along with the finely chopped red onion, red pepper, and jalapeno. Season the salsa to taste with pepper, salt, and remaining 1/4 teaspoon cumin. Toss together.
  • ASSEMBLY: Serve grilled chicken over a bed of cilantro lime rice or quinoa (if desired — see recipe notes) and add spoonfuls of the salsa to top. Enjoy immediately!
